1. ◇How Many Japanese Restaurants are there Around the World?
With Washoku being added as an Intangible Cultural Heritage by UNESCO, the number of Japanese restaurants around the world began to increase. They say there are now a total of 118,000 Japanese restaurants worldwide. (October, 2017)
Washokujob was also established in 2017, and we have already worked with clients in 27 countries who have come to us in search of Japanese culinary professionals. It is clear that as the number of Japanese restaurants increased, the need for Japanese chefs has also similarly increased.
2. ◇The Spread of Japanese Cuisine Abroad
Many foreigners who experience Japanese food for the first time will only associate it as being sushi and sashimi. Also, all around the world, there are still many foods and flavors that are not intrinsically Japanese, but still identified as such. It will still be a while before authentic Washoku reaches around the globe.
That being said, there are still many dining establishments offering a true Japanese culinary experience. Of course, starting with sushi, but also expanding to yakitori, tempura, teppanyaki, sukiyaki, udon, ramen, and more. There are also many Japanese-style Izakayas that offer full menus of authentic Washoku cuisine. Based on that, you might be able to say that more than just sushi and sashimi have become popular around the world.
3. ◇To Meet the Need for Washoku
On one hand, perhaps thanks to the power of the internet and a boom of tourism in Japan, many people have garnered a curiosity and knowledge for what authentic Japanese cuisine is, which has in turn lead to a change within Japanese restaurants abroad. This change is that many Japanese restaurants abroad are now starting to "specialize" in one area of Japanese cuisine
In years prior, many restaurants would offer "Japanese food" that was altered and arranged to meet the tastes and desired appearances for local customers, such as the "California Roll." But now as authentic Japanese cuisine is becoming more well known, and the tastes of the general public are also changing, the number of people seeking an authentic restaurant experience has also increased. And to meet this desire, many restaurants have been changing as well to offer this authentic experience to please their customers.
4. ◇Share Japanese Food with the World!
With these changes regarding Japanese cuisine across the globe, more and more abroad restaurants are desperately seeking chefs who know the true techniques and flavors required to prepare authentic Japanese cuisine. This is also the perfect opportunity for Japanese chefs who have honed their skills in Japan to venture abroad and share their culinary knowledge with the world!
Many Japanese chefs already have a strong desire to practice their craft in other countries! Washokujob also hopes for these ambitions to come to fruition, and offers their full support to help these chefs succeed in their challenges abroad.
